Chicken breasts suit fairly quick cooking, while thighs cope better with roasting and braising. For even results, choose pieces of a similar size or start the thickest ones a few minutes before the rest.

Keep the meat juicy

Pat the chicken dry before browning and leave room between the pieces so they sear rather than release water. Check the thickest part using the recipe's doneness cues or a thermometer, without touching the bone.

Handle raw chicken cleanly

Do not wash raw chicken, because splashes can spread bacteria around the sink. Keep it chilled until preparation, use a separate board and wash your hands, knife and worktop before touching ready-to-eat food.
