The thickness of a fillet is the best starting point for adjusting the cooking time without drying it out.
Choose fillets of a similar thickness when possible. If one end is very thin, tuck it underneath or check it earlier; a thick piece will need a few more minutes.
Pat the fish dry and preheat the oven or pan properly. Begin checking at the first time given in the recipe, then use its visual cue or stated core temperature rather than automatically extending the cooking time.
Buy fish near the end of your shop, transport it cold and keep it in the coldest part of the fridge. Defrost it in the refrigerator, never on the worktop, and cook it promptly.
