The water content and density of each vegetable determine how large to cut it and when to add it.
Cut pieces of the same vegetable to a consistent size. Make dense vegetables such as carrots or potatoes smaller, and leave quick-softening vegetables larger so that everything is ready together.
Dry vegetables after washing and do not overcrowd the tray or pan. For zucchini, mushrooms or tomatoes, a wide surface and sufficient heat encourage browning rather than cooking them in their own juices.
